Cajun Seasoning Mix

Smoked paprika
1 tbsp
Garlic powder
1 tsp
Onion powder
1 tsp
Dried oregano
1 tsp
Cayenne pepper
0.5 tsp
Salt, freshly ground black pepper
to taste

Prep the Wings:
Rinse the wings and pat them completely dry with paper towels to ensure maximum crispiness. Cut them into drumettes and flats, discarding the tips.

Seasoning:
In a small bowl, mix all the ingredients for the Cajun seasoning (paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, salt, and black pepper). Toss the wings with olive oil in a large bowl, then sprinkle the spice mix over them. Mix thoroughly using your hands so every wing is evenly coated.

Bake:
Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper. Place the wings in a single layer, leaving some space between them. Bake for 35–40 minutes, flipping once halfway through, until the skin is beautifully crispy and browned.

Serve:
Transfer the wings to a bowl, garnish with fresh cilantro, and serve hot with lime wedges on the side for a fresh squeeze of citrus juice, just like in the photo.
