Preheat the Oven: Set your oven to 425°F (220°C / Fan 200°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup. For extra crispy skin, place a metal wire rack on top of the baking sheet.

Prepare the Chicken: Pat the chicken drumsticks thoroughly dry with paper towels. This is the secret step to achieving wonderfully crisp skin.

Mix the Glaze: In a large mixing bowl, whisk together the olive oil, honey, whole grain mustard, soy sauce, garlic powder, smoked paprika, salt, and black pepper until fully combined.
